Cafe Find: Butler Bakeshop NYC
Just shy of the Williamsburg Bridge in the blossoming South Williamsburg neighborhood is Butler Bakeshop NYC, a casual counter service bakery showcasing sweet and savory pastries using fine dining techniques.
Michelin-starred baker Ryan Butler, formerly of Piora and Gramercy Park Hotel, brings a global take on traditional baked goods such as his Sticky Bun with miso, toffee, and pecan and the Breakfast Empanada topped with dukkah. The seasonal global menu also has a childhood basis, with nostalgia-inducing Morning Glory Muffins, inspired by Ryan’s childhood affinity for Carrot Cake.
The space was previously an ice cream factory and before that a Turkish Cigarette Production Facility. It has become a favorite destination for creatives and patisserie fans, its sunny industrial space inspired by French bistro style. It takes on the hallmarks of bistro design, with its wrap around leather banquettes, pendant lighting, and handmade sconces, low slung two tone rattan chairs and open shelving and eye-catching brass tabletops.
Alongside the pastry is a comprehensive coffee and tea menu from Intelligentsia, and hints at co-owner Hugo Murray’s Australian heritage with the presence of flat whites (Murray also designed the space). The popular light pink and blue to-go Butler cups are designed by Billie Anne Racine (who also created the cafe logo), which are inspired by Ryan’s handwriting.
