NYC Restaurant Find: Hi-Collar
HI-COLLAR, EAST VILLAGE
I keep saying “this is my new favourite restaurant” but this time it really is, promise. Hi-Collar is one of those no-details-spared Japanese hotspots. It’s a Parisian-inspired cafe by day and restaurant/sake bar by night. The place literally transforms as soon as the barman stealthily slides the wall-to-wall cabinet door to reveal the sake selection and at the same time conceals all evidence that it was once a coffeehouse. Remember to request a demonstration; it’s like magic before your eyes.
And so is the food. Fusion cuisine doesn’t manage to excite me unless the Japanese are doing it and Hi-Collar does not disappoint with their subtleties  – they merely flirt with the idea of western cuisine (think al dente pasta with uni) while they stay true to their fabulous roots.
Best Bit: Dining here is like stepping out of New York City right into the Japanese jazz age
